2016 - Italy, Puglia
The winery, which also owns a large part of olive groves, is located in the heart of Puglia, in southern Italy.
This year the company is about to begin the change of production procedures from the classic method, based on the use of pesticides and fertilizers, to a method without chemicals, but using products based on actual microorganisms.
In winter 2015 the organic material was prepared, the different organic materials were collected in large heaps, organic waste after the production of olive oil, the production of wine, and others.
Together with the stalled and droppings, these products were well mixed with EMa.
Eventually the heap was covered and waiting for spring, when the real fermented material distributed in the vineyards and olive groves, to nourish and restore the vital balance of the soil.
